Yesterday I was 3 for 3.

Since it was Father’s day I had asked my husband what his requests might be as far as meals go for his “special” day.

His email response back to me was:

“Breakfast: Either an omelet filled with mushrooms, that maple breakfast sausage, tomatoes, green pepper, onion, & of course cheese.  Or some kind of breakfast quiche’.

Dinner: Meatball subs, & just for me some shrimp on the side!!!  & Labatt’s Blue Light Limes.”

And as I am typing this I just now realized that his “shrimp on the side” is still down in the basement freezer.  My bad.

Anywhooooo

For breakfast I made both a

Cheesy Sausage and Egg Bake.  I put in maple flavored breakfast sausage, mushrooms, green pepper, onion, tomatoes and shredded cheddar.

and French Toast Casserole that I made with squishy cinnamon swirl bread.

What was even “sweeter” was being able to have one cooking in the oven and the other cooking in the Hamilton Beach Counter Top Oven, well, that and they both turned out awesome and delicious!

We went out and enjoyed some geocaching ,  a Muckdogs baseball game, got too much sun and made too many trips to the dang bathroom (but Aidan had no accidents so yea) came home (after what seemed like a very long and tiring day) and I made meatballs.

I’ve tried many a recipe for meatballs but I think I’ve settled on:

1lb ground beef

Green onion

Italian seasoned breadcrumbs

and Parmesan Cheese.

They were yummy and we made to die for meatball subs with ‘em.

Then we went out for ice cream only to find the place not open (bummer) but we settled for $9 worth of gas station purchased nutty buddies.  They were actually tasty, and yes tasty enough to erase the sticker shock.  Seriously, $9!!!!!!

But alas, all good things must come to an end.

Now I’m relaxing on the couch with my kitty, who covered his face when I turned on the light to take a picture of him.

The upcoming week is gonna take us right into summer vacation.  And for that I am so thrilled.

My menu’s have been a bit forgiving on the actual planning side and yet the meals are still turning out finger lickin’ good.

Here’s what I “think” is on the menu this week:

Monday: Steak Chops on the grill using Marinade for Steak I

Tuesday: Chicken breasts marinated in Italian dressing

Wednesday: Dijon Grilled Pork Chops

Thursday: Grilled Chicken Patties (Last day of school and one of Jacek’s favorites!)

Friday: Finger Foods On The Go (taking the boys to their first drive-In experience to see Cars 2, wish us luck!)

Saturday: Hot Dogs and Pasta Salad (Jacek’s last T-ball game, maybe some fishing after the game, and S’mores after dinner!)

Sunday: Rotisserie Pork Loin (just rubbed with garlic, salt and pepper and WOW!!)

That french toast casserole looks delish! I may have to try that soon. Question: what is your favorite chicken in a crock pot recipe? I'm trying to use my slow cooker more but I am low on recipes. I made this basil chicken the other day that didn't turn out quite right so I will definitely be making it again. I had two issues, I cooked it way too long and the chicken was still kind of frozen when I threw it all together so it was super watery. Oops!

I want to eat at Kerri's house every week
